Catfish Grilled Jerk Style

Catfish grilled jerk-style is awesome!

Just talking about this recipe will make your mouth water!

Preparation Time: 15 minutes

Cooking Time: 12-18 minutes


What you will need:

4-6 catfish fillets *tip: To make the catfish fillets taste better,
remove the dark red meat, this is where the muddy or fishy tastes come from.

2 green onions, finely chopped

2 jalapeño peppers, seeded and chopped

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce


2 tablespoons white wine vinegar

1 tablespoon fresh ginger, minced

1 garlic clove, minced

1 teaspoon allspice

1/2 teaspoon dried thyme

1/4 teaspoon salt

1/8 teaspoon black pepper


large bowl and cover

marinade brush

sheet of foil-optional

and of course "a grill" gas will work best but a good old fashion charcoal works fine just get your coals going and adjust your cooking height.


Preparation:

1. Preheat grill to the medium setting.

2. Combine all ingredients, except the catfish fillets, in a large bowl.

3. Add the fish to the bowl, roll the fillets in mix till well covered.

4. Cover the bowl and allow to stand for 5-10 minutes at room temperature.

5. Remove the fillets from bowl and save the remaining marinade.

6. Lightly oil the grill and put fish on, some people use a sheet of foil.

7. Brush on about half of the marinade.

8. Cook for 5 minutes.

9. Turn fish over and brush on the remaining marinade.

10.Cook for 7-12 more minutes.

11. Remove from heat and serve.


If you want your catfish a littler spicier, add another chopped jalapeño or two and a dash of Tabasco to the seasonings mix. Also there are several great cajun mixes that will spice it up. Cayenne is always a hot choice.
