Catfish grilled jerk-style is awesome!
Just talking about this recipe will make your mouth water!
Preparation Time: 15 minutes
Cooking Time: 12-18 minutes
What you will need:
4-6 catfish fillets *tip: To make the catfish fillets taste better,
remove the dark red meat, this is where the muddy or fishy tastes come from.
2 green onions, finely chopped
2 jalapeño peppers, seeded and chopped
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons white wine vinegar
1 tablespoon fresh ginger, minced
1 garlic clove, minced
1 teaspoon allspice
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon black pepper
large bowl and cover
marinade brush
sheet of foil-optional
and of course "a grill" gas will work best but a good old fashion charcoal works fine just get your coals going and adjust your cooking height.
Preparation:
1. Preheat grill to the medium setting.
2. Combine all ingredients, except the catfish fillets, in a large bowl.
3. Add the fish to the bowl, roll the fillets in mix till well covered.
4. Cover the bowl and allow to stand for 5-10 minutes at room temperature.
5. Remove the fillets from bowl and save the remaining marinade.
6. Lightly oil the grill and put fish on, some people use a sheet of foil.
7. Brush on about half of the marinade.
8. Cook for 5 minutes.
9. Turn fish over and brush on the remaining marinade.
10.Cook for 7-12 more minutes.
11. Remove from heat and serve.
If you want your catfish a littler spicier, add another chopped jalapeño or two and a dash of Tabasco to the seasonings mix. Also there are several great cajun mixes that will spice it up. Cayenne is always a hot choice.

Catfish Teriyaki Marinade Recipe
Catfish Teriyaki Marinade
What You Will Need To Make Catfish Teriyaki Marinade
1/3 cup teriyaki sauce
4 -6 catfish fillets *tip: To make the catfish fillets taste better,
remove the dark red meat, this is where the muddy or fishy tastes come from.
2 10 oz. each boxes frozen stir-fry vegetables and seasonings
2 Tbsp. Oriental sesame oil
1/2 cup sliced green onions
1-1/2 cup chow mein noodles
a broiler pan
a large skillet with lid
Step by step instructions:
1. Remove the broiler pan from your oven and line it with foil.
2. Turn your oven to Broil.
3. Place the teriyaki sauce in a large skillet bring it to a boil .
4. Once it reaches a boil remove the sauce from the heat.
5. Add your fish fillets, coat both sides then let marinate 3-5 minutes.
6. Arrange the fillets in single layer in the foil lined broiler pan.
7. Place the pan 3 or 4 inches from heat source, Broil for 7-10 minutes, or until lightly browned.
8. Throw away any remaining teriyaki marinade and rinse the skillet.
9. Put the stir-fry vegetables, seasonings and sesame oil in the skillet.
10. Cover and cook 4 to 5 minutes.
11. Sprinkle on the green onions after 5 minutes of cooking.
12. Broil another minute or two longer.
Serve immediately with the vegetables and noodles. makes 4-6 servings.
If you need a bigger meal do 8-10 catfish fillets and double the other ingredients.
